Every Eurasian family has their own heirloom Sugee recipe that's such a mainstay that the cake is practically a member of the family; present at every single celebration, party or even the tiniest of gatherings!⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the longest time D was hesitant to bake Sugee. Just like pineapple tarts, everyone has their favourite, and varying ideas of how it should taste. I suggested that we start from his Grandfather’s (Papa Oscar’s) recipe and adapt from his family and the team’s feedback.⠀⠀⠀⠀⠀⠀⠀⠀⠀
I could not stop eating the moment I tried it. Like a rich butter cake, velvety, with an added depth. A gritty texture mixed in, filled with flavours of toasted almonds & semolina. I always know when this cake is baking. Smells like a cozy home and afternoon tea.⠀⠀⠀⠀⠀⠀⠀⠀⠀
